MPA Recruitment is working alongside a well established hotel based in Omagh to recruit a Sous Chef.
Complete order sheet when head chef is on holidays
Complete rota when head chef is on holidays
DailyComplete spot checks on all chillers, freezer & dry store that all food stuffs are correctly stored, covered & labelled in rotation
Follow up with head chef on any food discrepancies & plan out training format to fix issuesCheck that prep levels correspond with current business, in house residents & forecasted business, & address if notBe on duty when head chef is on days off to maintain standards & kitchen functionality.
Check pickup of daily/weekly business & address prep sheets, order sheets to make team aware of “whats on”Help & mentor other team members in accordance with head chefs standards.
To monitor staffing levels to coincide with busy/quiet periods
Ensure everybody takes their breaks & are back on time
To monitor “smoke Breaks” & to ensure nobody takes one without consent
Ensure the kitchen is kept clean, tidy & organised throughout the day regardless of how busy it is or not
Ensure KP’s are cleaning where & when possible
Follow through in accordance to team members with head chefs instructions on daily tasks
Monitor quality & quantity of any goods in & to address on the spot or with head chef upon return
To attend HOD meeting if head chef is unable to do so & to put across any issues raised& to liaise with head chef upon return
Ensure HACCP sheets are correctly filled in & to give training if needed
